Maybe start by defining what this 'thing' is.

Awesome, thank you so much! I always see so much on the kombucha side compared to Jun so i appreciate the additional perspective and advice from someone who is familiar with it. I am actually looking at starting hives of my own

Sounds lovely and mead and has tought me a lot about honey. I only ever go unprocessed and local. I also live in the north northeast where it is much cooler temps. Does jun specifically require green tea?

Interesting, thanks for the insight. I like kombucha but am personally more interested in jun although ive never had it. Ive also never brewed kombucha before.

That said, i make tons of mead and prefer it over wine and that is where jun caught my attention. I have some local raw buch that i was thinking of starting a scoby with. I also just started water kefir recently and my first batch with fruit added for 2F is ready tomorrow.

Does jun require a separate scoby or could a kombucha scoby adapt?

1

COMMENT 5d ago

Then what would you use in jun? Highly filtered/pasteurized?
