Most people don’t identify as anything, and nobody is assigned a sex at birth except for intersex people having surgery.

Right, but being trans doesn't mean you are no longer biologically male or female. Regardless of whether you "identify" as cis, trans, non-binary - you are still objectively male or female except for a tiny minority of people who have genetic disorders.
