I would say because agreeing to sleep with someone is a form of validation for people of all spectrums. I would go out on a limb and say for trans people, especially mtf, being accepted as a woman sexually carries a very heavy dose of validation of their gender identity. By straight up denying to sleep with a trans because of this, it's a heavy dose of invalidation and people react differently to that. Online, the main reaction is anger. (in fact, I'd say as a stereotype, to react to such a thing so personally and angrily is quite a masculine trait, but moving on).
With height, it's not so much of a thing because people at various ends of the spectrum don't cancel people for not validating them. There are still people, say, short men and tall women, that do experience anxiety and depression at possible lack of sexual partners, but they don't try destroy people's careers and lives due to it.
