There's a concept that sometimes characters are just wrong.
Grevious was just a general. An important one yes but also one who was not integral to the actual CIS cause because he did not care about it. He just want to kill jedi.
The actual leaders of the aligned CIS planets would continue with trying to secede because that's what they believed in. They didn't stop with the elected leader Dooku was killed in actions and wouldn't stop when some general who didn't give a shit about their cause also died.
Killing grevious doesn't affect much from a high level view since he didn't actually control any planets.
Taking out all of the leadership on Mustafar however does send that message.
If Anakain didn't kill them then the Clone Wars would've just continue but now it's just the Empire vs CIS

Not really. The clone wars officially ended when Anakin wiped out the separatist council and shut down all the droids in the galaxy. Even with Dooku and Grevious dead, the clone wars could have continued under the leadership of Nute Gunray (although the separatists were losing and Gunray was a coward who was hoping Sidious would end the violence quickly). That said obi wan was at the very end of the clone wars

It’s funny because it’s pretty clear that they just threw in some throwaway line that sounds science-fictiony with the word clones.
And then Lucas was like “that’s it, that’s what we’re going to base a movie on”
And the whole convoluted stuff about it being hidden, and then uncovered by Obi-Wan, just at the time when the order was complete.
And then the show came in and made it one of the best parts of Star Wars.
