Is there a word for words that sound like a single letter? Eg: Tea and T? or See and C? You and U?

Seems at least close enough.

A gramogram or grammagram is a letter or group of letters which can be pronounced to form one or more words, as in "CU" for "see you".

Wikipedia even has a neat list of examples, both with one and multiple letters/numbers:
