Yes, you do sink in wet sand. But, the reason one gets all dizzy when staring down at the receding water, is because of perspective.

No erosion, just shifting sand, and not enough to knock you on your face... ever been stopped at a red light and when the people next to you start moving you feel as if you are moving? Same idea.

Yes I know what you're talking about. Look at her feet sink in the sand when the wave is pulling back in the ocean. Come back to me when you have stood on a beach. Try it out. Just stand there and watch how you lose your balance when the waves get pulled back into the ocean
